Softneck varieties are often milder in flavour and easier to braid into bunches for storing.
Hardneck varieties have a more complex flavour and are more suited to cold climates. They also develop a ,Scape’ which is a long flowering stem. This is usually cut off as soon as you see it, as it does produce smaller bulbils which can reduce the energy the plant needs to produce the cloves. These scapes often start to curl as they grow, making them easy to identify and remove.
All varieties grow well in the UK but maybe look for the Hardneck varieties if you are in the far North’
